A microfluidic chip is used to study the dynamics of liquid-liquid phase separation (LLPS) of microdroplets and to understand the various features of the LLPS such as nucleation, growth, and diffusion during phase separation. The experiment involves droplet formation by injecting a surfactant solution containing phenol red into an immiscible carrier solution of silicone oil and decane. The droplets are separated from the carrier solution and analyzed using a microscope. We observe that the droplets start phase separating by undergoing fission, fusion, and eventually growth by a combination of both these processes. We demonstrate that the mode of the phase separation depends on the volume of the droplets and the flow rates of the carrier and the droplet solutions. The effects of various factors such as a change in viscosity of the carrier solution, a change in the initial droplet size, and a change in the rate of introduction of the carrier solution into the chip on the dynamics of droplet growth are investigated. Additionally, it is demonstrated that the droplet size and the dynamics of LLPS depend on the surface tension of the droplet. Moreover, we have shown that the interfacial tension between the oil and the carrier solution, or the carrier solution and the aqueous phase, can also affect the dynamics of droplet growth by suppressing the growth of the droplets. It is also observed that the growth of the droplets during phase separation is not possible when the salt is present in the carrier solution.
